300grams of fresh pineapple
2oz unsweetened vanilla almond milk
1/2tsp xanthan gum (stabilizer)
Directions: Cut up fresh pineapple into small chunks and freeze in a ziploc bag for about 2 hours. Remove from freezer and place in a food processor with milk and purée. Add in xanthan gum and continue to mix until smooth. Pour into bowl and place back in the freezer for another hour to thicken. Once thick, place back in food processor to smooth out and serve immediately!
