Quick & Simple Grilled Salmon – with a Sweet Glaze!

Ingredients:

5oz raw salmon fillet
1tbsp soy sauce
1tbsp water
1/2tbsp lemon juice
1/2tbsp olive oil
1tbsp Better Body Foods coconut palm sugar (sub brown sugar)
1/4tsp minced garlic
Fresh Ground Pepper

In a small bowl mix together the soy sauce, water, lemon juice, olive oil, sugar & garlic until the sugar is dissolved. Season the salmon with some fresh ground pepper and place in a zip lock bag. Pour the marinade into bag, turn to coat and place in the refrigerator for at least 2 hours.

Preheat grill to medium. While grill is heating up, pour marinade out of the zip lock bag into a small sauce pan. Bring to a boil and then reduce heat and simmer until sauce slightly thickens – about 3-4 minutes. Set aside. Grill salmon on an oiled grate for about 4 minutes each side or until cooked to desired temperature. Pour glaze over salmon & enjoy!

Super easy & fun for the kids!

1 Granny Smith apple

2tbsp Better Body Foods coconut palm sugar

1tbsp cinnamon

 

Preheat oven to 225 degrees. Wash & dry apple. Slice the apple as thin as possible using a mandolin slicer (you could try using a knife but it won’t be easy!). Mix together the coconut palm sugar and cinnamon on a plate. Let the little ones get involved by dipping each piece of apple lightly into the mixture on both sides. Place apple pieces on parchment lined baking sheets(2). Bake in the oven for 60 minutes, remove and flip apple slices. Place back in the oven for another 60 minutes, making sure to rotate the baking sheets so that the one that was on the bottom is now on the top.

1 slice of pineapple
1-2 red onion slices
1/4-1/2 of red bell pepper (optional)
1 Nature’s Own whole wheat sandwich round
Few pieces of baby spinach or arugula
Fresh ground pepper

Mix together soy sauce, pineapple juice, ketchup, sugar & garlic together in a small bowl until sugar is dissolved. Reserve 2 teaspoons of marinade in a small bowl and set aside for basting later. Season both sides of chicken with fresh ground pepper and place chicken, red pepper & onion in zip lock bag. Pour remaining marinade into bag, turn to coat and then refrigerator for at least 2 hours.

Preheat grill to medium-high heat and grill chicken 6-8 minutes per side or until cooked through depending on breast thickness basting occasionally with remaining marinade. I added the red pepper to the grill at the same time as the chicken and then I added the onion/pineapple to the grill after I flipped the chicken. Serve on a whole wheat sandwich round with a few pieces of spinach!

I was able to significantly reduce the calories/fat in these brownies by using Better Body Foods PB Fit powdered peanut butter instead of regular peanut butter! Another way I kept the calories down was by using TruVibe Organics pure CACAO powder instead of regular cocoa powder. The depth of the dark chocolate flavor is so much stronger than regular cocoa powder that I was able to eliminate using chocolate chips! These come out to 81 calories per brownie/1300 for entire 8×8 pan.

Ingredients:

105grams of Better Body Foods PB Fit (mixed with 1/2cup + 1 tbsp water)

5tbsp of ground oats (measure after grinding oats – use gluten free oats if necessary)

1/4cup of TruVibe Organics pure cocao powder (http://truvibeorganics.com/)

1 scoop Plant Fusion chocolate protein powder

1/2tsp baking powder

1/4tsp baking soda

3tbsp Better Body Foods agave nectar

2tbsp Better Body Foods coconut palm sugar

2tbsp stevia in the raw

1tsp Better Body Foods pure vanilla extract

3/4cup unsweetened applesauce

1 large egg

 

Preheat oven to 350 degrees and line an 8×8 baking dish with parchment paper. Don’t attempt to make these without the parchment paper. They WILL STICK even with cooking spray!

In a medium size bowl add the oat flour, cocao, protein powder, baking powder, baking soda and then set aside.

In a small bowl mix the powdered peanut butter with the water(1/2cup + 1tbsp) until well mixed. Measure out 1/2 cup of the peanut butter (save the rest to swirl on the top) and place it in a large bowl with the coconut palm sugar, stevia, vanilla, agave and applesauce. Beat wet mixture using a hand mixer. After the mixture is smooth add the egg and beat lightly until combined. Add the wet mixture into the oat mixture and stir just until combined making sure not to over mix. Pour into 8×8 baking dish and swirl the remaining peanut butter into the top. Bake for about 22-24 minutes making sure not to over cook. I took mine out at 22 minutes and they were perfectly cakey/fudgy!

Ingredients:

5oz raw chicken breast
1tbsp Better Body Foods agave nectar
1tbsp fresh lime juice
1/2tbsp soy sauce
1tsp Better Body Foods coconut oil
1/tsp Better Body Foods coconut palm sugar
1/8tsp minced garlic
1/8tsp onion powder
1/8tsp lime zest
Fresh ground pepper

Salad:
Bowl full of spring mix/greens of choice
Handful of blueberries
Handful of raspberries
1/4 of a chopped apple
10grams of pecans

Preheat grill to medium-high heat. Grill the chicken breast for 8 or so minutes per side or until cooked through. While the chicken is cooking place the spring mix in a bowl with blueberries

Gluten Free Peanut Butter & Chocolate Chip PROTEIN Blondies  with only 5tbsp’s of gluten free oat flour & no beans! Did I mention, kid approved!

Ingredients:

5tbsp oat flour (regular oats ground into a flour, make sure to measure after they’ve been ground)

30grams of Plant Fusion vanilla protein powder

1/2tsp baking powder

1/4tsp baking soda

1/4tsp Cinnamon

2tbsp Better Body Foods Agave Nectar

3tbsp Better Body Foods Coconut Palm Sugar

1tsp Better Body Foods Pure Vanilla Extract

1/2cup of creamy peanut butter

1/2cup of unsweetened applesauce

1 whole egg

1/3-1/2 cup of chocolate chips (dark or milk chocolate) – divided

 

Preheat oven to 350 degrees and line an 8×8 baking dish with parchment paper. Don’t attempt to make this without the parchment paper. It WILL STICK even with cooking spray, ask me how I know!

Beat wet mixture using a hand mixer. I originally tried doing this with a spoon and it just wasn’t working. The hand mixer was perfect! After the mixture is smooth add the egg and beat lightly until combined. Add the wet mixture into the oat mixture and stir just until combined making sure not to over mix. Fold in all but a small handful of the chocolate chips and pour into the pan with parchment paper. Top with the remaining chocolate chips and bake about 20 minutes making sure not to over cook. I took mine out at 20 minutes and they were perfectly cakey!

Ingredients (2 servings):

(2) 5oz salmon fillets

2tbsp soy sauce

2tbsp Better Body Foods Coconut Palm Sugar

2tbsp Water

2tsp olive oil

1/2 clove of garlic – minced

Grilling Vegetables of choice (I used zucchini, yellow squash, red onion, red & green bell pepper, mushrooms)

1/8tsp cornstarch (optional)

2 wooden or metal skewers

Fresh Ground Pepper

In a small bowl mix together the soy, sugar, water, oil and garlic until the sugar has dissolved. Season salmon/vegetables with some fresh ground pepper. Place the salmon in the bottom of a large zip lock bag and then the vegetables. Remove about 3tbsp of the marinade in a separate bowl (for basting) and then pour the rest of the marinade into the bag. Refrigerate for at least 2 hours. Preheat a grill to medium heat. Add cornstarch to the reserved marinade and microwave for about 30 seconds to slightly thicken it. Thread the vegetables onto skewers (if using wooden, make sure to soak for 30 minutes in water so they don’t burn) and place on grill. I put the vegetables on about 5 minutes prior to the salmon as I used large pieces. Next lightly oil the grates and grill the salmon 6-8 minutes per side until cooked to desired temperature. Basting both vegetables & salmon until cooked.
