2 slices of Mahler’s low carb/high protein bread
100g fresh strawberries – diced
45g fat free plain cream cheese
1 egg white
1oz unsweetened almond milk
1tsp water
1/2tsp pure vanilla extract
1/4-1/2tsp cinnamon
1 stevia packet
Optional: sugar free maple syrup

In small microwave safe bowl mix together 35g of the diced strawberries with the stevia packet & water. Microwave for 25-30 seconds and then mash with a fork. Mix in the cream cheese until well combined – set aside. Whisk the egg, milk, cinnamon & vanilla together in a small bowl. Dip each piece of bread in the egg mixture and cook over medium heat for 2-3 minutes per side. Spread the cream cheese on one piece of the French toast, top with strawberries and the remaining piece of toast. Serve with sugar free maple syrup.

Ingredients:

2 slices Sara Lee 45 calorie wheat bread
70grams Dannon Light & Fit fat free vanilla greek yogurt
50grams fresh strawberries – cut up
1 egg white
1oz unsweetened vanilla almond milk
SPECIAL INGREDIENT – 1/4tsp Pineapple Coconut Dasani Flavor Enhancer Drops
1/4tsp cinnamon
1/4tsp Better Body Foods organic pure vanilla extract
1.5-2grams reduced fat shredded coconut (I got mine at Whole Foods)
1 packet of stevia

Mix the greek yogurt with the 1/4tsp Dasani drops & half of the shredded coconut – set aside.

In a small bowl whisk together the egg white, milk, cinnamon & vanilla. Dip each piece of bread in the egg mixture and cook over medium heat for 2-2:30 minutes per side. While the French toast is cooking, mix the strawberries together with a packet of stevia. Cut toast diagonally and layer with yogurt & cut up fresh strawberries. Top with the remaining shredded coconut!

Ingredients:

2 slices of Mahler’s low carb Flax & Soy bread
80grams fresh strawberries
62grams skim ricotta cheese
2 egg whites
1oz unsweetened almond milk
1tsp honey
1/4tsp lemon zest
1/2tsp vanilla extract
1/2tsp cinnamon
1-2 packets stevia
1 basil leaf
Sugar Free Maple Syrup

Mix together the honey, lemon zest & ricotta in a small bowl – sweeten to taste with a little stevia. Cut up the strawberries and set aside.

In another small bowl beat together with a fork the egg whites, milk, cinnamon, vanilla & stevia. Dip each piece of bread into the egg mixture and cook for 2:30-3 minutes per side over medium heat.

Cut the toast on a diagonal and layer with the ricotta and strawberries. Top with some fresh basil & sugar free maple syrup.

French Toast:
3 pieces of Sara Lee 45 calorie bread

1/4tsp Better Body Foods Organic pure vanilla extract

Sugar free chocolate sauce/powdered sugar for topping

Filling:
21grams mascarpone cheese
50grams of skim Ricotta cheese (could reduce macros more with fat free)
6grams of TruVibe Organics cacao nibs
2packets of stevia
1/4tsp Better Body Foods Organic pure vanilla extract
Pinch of cinnamon

Mix together all of the filling ingredients in a small bowl and set aside. In a separate small bowl mix the egg white, milk, vanilla & cinnamon together and lightly beat with a fork. Using a rolling pin, flatten each piece of bread and cut out a circle. Dip each circle into the egg mixture and cook over medium heat for 2 or so minutes per side. Stuff each piece of toast with the filling (I secured mine with a tooth pick) and top with a little sugar free chocolate sauce & powdered sugar!

My little guy was responsible for using the cookie cutter on the bread as well as crushing the cereal! His future wife will thank me for the cooking skills he is going to have by then!

Ingredients:

Few Slices of bread

1/2-1cup of Cinnamon Toast Crunch Cereal (plan on about 1/3-1/2 cup per serving of bread)

2 egg whites

1oz any milk

1/2tsp cinnamon

1/2tsp vanilla extract

Place the cereal in a zip lock bag and using a rolling pin, rubber mallet or even little hands crush up the cereal into smaller pieces and pour into a shallow dish. Optional – Use any cookie cutter to cut out desired shape of bread. Combine the eggs, milk, cinnamon & vanilla together in a small bowl and lightly beat with a fork. Dip bread into egg mixture and then into the cereal, coating both sides. Cook over medium low heat (cereal will burn on high temps, ask me how I know!) for a few minutes on each side. Serve with warm maple syrup!

Ingredients:

2 slices of Mahler’s low carb Flax & Soy Bread (I purchase mine at Fresh & Easy but I’m sure it’s available online)

100grams fresh raspberries

85grams Dannon Light & Fit fat free vanilla greek yogurt

2 egg whites

1oz unsweetened vanilla almond milk

1/2tsp Better Body Foods organic Pure Vanilla Extract

1/2tsp cinnamon

1 packet of stevia in the raw

Sugar Free Chocolate sauce

Preheat waffle iron.

Mix together the egg, milk, cinnamon, vanilla & stevia in a small bowl until well combined. Place bread in shallow dish where each slice can lay flat. Pour egg mixture into dish and flip bread multiple times until all of the liquid is soaked up. Cook in preheated waffle iron. Once out of the waffle maker, cut each slice of bread into quarters and sandwich with greek yogurt/raspberries. Top with a little sugar free chocolate sauce!

Ingredients: Cinnamon Rolls:

4 Slices of Sara Lee (45 cal) wheat bread

2 Egg Whites

1oz of @lovemysilk unsweetened vanilla almond milk

1/2tsp Cinnamon

1/2tsp pure vanilla extract

2 packets of stevia

Protein Frosting/dip:

15grams of @plantfusion vanilla protein powder

2oz of @lovemysilk unsweetened vanilla almond milk

1 packet of stevia

Vegetable Frittata:

4 Egg Whites

1oz Red Bell Pepper diced

Few pieces of cut up kale

1 sliced cherry tomato

50grams of sliced Avocado

Red Pepper Flakes & Fresh ground pepper

 

Directions:

Preheat oven to 375. Make frittata first by mixing 4 egg whites with red bell pepper, kale, red pepper flakes and pour into oven safe dish. Top with tomato slices and fresh ground pepper and place in oven. Frittata will bake for about 20-25 minutes or until egg is set. While frittata is in the oven, cut crust off of all bread slices and flatten them with a rolling pin. Mix 2 egg whites, 1oz of milk, 1/2tsp of vanilla & 1/2tsp of cinnamon in a small bowl. Soak each piece of bread (both sides) in egg mixture until soaked through and lay on a flat surface. Sprinkle the bread with 2 stevia packets & some cinnamon. Roll each piece of bread up and cut in half. Place cut up cinnamon rolls in a mini muffin pan & bake in the oven with the frittata for 10-11 minutes. For the dip, mix the protein powder with the milk & remaning stevia packet. Remove about a 1/4 of the dip and thin out with some water or more milk to make the frosting.
