In case you can’t tell, I’m on a total superfoods kick right now. I started adding them into my diet a few months ago and I have noticed HUGE changes in my overall mood & energy level. I am now eating them every morning and sometimes also in the afternoon if I’m feeling sluggish!

1/2cup unsweetened vanilla almond milk
1/2 banana
1/2tbsp TruVibe Organics chia seeds
1tsp instant dark roast coffee
1/2tsp TruVibe Organics cacao powder
1 stevia packet

Topping:
1/2 banana
1tsp TruVibe Organics hemp seed
1/2tsp TruVibe Organics cacao nibs

Mash half of the banana in a bowl with a fork and then mix in the milk. Add in the oatmeal, coffee, chia seeds, cacao powder and stevia. Refrigerate overnight. Serve in the morning with the remaining banana and add on the hemp seed/cacao nibs!

Chia seeds can help with weight loss & reduce food cravings by preventing some of the food that you eat from getting absorbed into your system. They can also help your diet by making you feel full. This is because they absorb 10 times their weight in water, forming a bulky gel. They are also great for athletes because the “chia gel” can hydrate the body. There’s evidence to suggest they can reduce blood pressure. They are the richest plant source of Omega-3 (the vital fats that protect against inflammation—such as arthritis—and heart disease). In fact, they contain more Omega-3 than salmon!

Maca powder is rich in vitamin B vitamins, C, and E. It provides plenty of calcium, zinc, iron, magnesium, phosphorous and amino acids. It serves as a boost to your libido & increases endurance. At the same time it balances your hormones and increases fertility. If you find yourself overcome with anxiety, stress, depression or mood swings, maca may help alleviate these symptoms! Maca relieves menstrual issues and menopause. It alleviates cramps, body pain, hot flashes, anxiety, mood swings, and depression.

Cacao has more antioxidant flavonoids than any food tested so far, including blueberries, red wine, and black and green teas. In fact, it has up to four times the quantity of antioxidants found in green tea. The cacao bean is also rich in magnesium, an energy mineral and vital electrolyte. This super-food is also a good source of sulfur. Sulfur is associated with strong nails, shiny hair and a healthy liver and pancreas.

1 can of cannellini beans

4tbsp quick oats

1/3cup Better Body Foods agave nectar or honey

1 scoop Plant Fusion vanilla protein powder

1oz TruVibe Organics cacao nibs – yum!

Drain and rinse the beans well under running water. Place beans & agave nectar in food processor and blend until smooth. Next add in the protein powder, coconut oil, cinnamon & vanilla and continue to process until smooth – using a spatula to scrape down the sides. Transfer dough into a medium sized bowl and stir in cacao nibs & quick oats. Refrigerate overnight to allow dough to firm up. Once firm, roll into desired sized balls. Place the balls that you plan on dipping into chocolate in the freezer for about 2 hours. Melt the chocolate squares in a microwave safe dish in the microwave for 30-45 seconds. ‘No bake/Gluten Free’ Pumpkin & Chocolate Chip PROTEIN Bites!

WARNING these are super easy to make & highly addictive! I’ll give you a little tip on one of my favorite ways to eat this dough. I like to roll it into really small almost marble sized balls and eat it in a small bowl with 1/2 a cup of unsweetened vanilla almond milk. So good & kid approved!

1 cup of old fashioned oats (gluten free oats if needed)
2 scoops of Plant Fusion vanilla protein powder
1/4 cup of canned pure pumpkin purée
1/3 cup Better Body Foods agave nectar
1tsp Better Body Foods pure vanilla extract
1/2tsp pumpkin pie spice
1/2tsp cinnamon
1/8 cup mini chocolate chips

Mix all ingredients together in a medium sized bowl (I typically use my hands and work it like a dough) & then roll into desired sized balls! Store balls in an air tight container in the refrigerator. Preferably in the back where you can’t see them or I promise you will eat one every time you open the refrigerator door!

Carrot Cake baked oatmeal with Egg whites!

Carrot Cake baked oatmeal with Egg whites.

Ingredients:

1/2 cup of oatmeal

1/2 cup of almond milk

1/4 cup of shredded carrots

1 egg white

1tsp of vanilla

8 pecans & handful of raisins

1/2 tsp baking powder

Spices: 1/8-1/2 tsp depending on personal preference Cinnamon, ginger, nutmeg

Directions:

I mixed most of this together before I took my son to school and popped it in the fridge because I like my oats to soak and get soft. I baked it post workout.  Mix oatmeal, almond milk, carrot, raisins, spices, baking powder and vanilla together and let rest.

Preheat oven to 375 degrees. Stir in egg white, top with pecans. At this point I dusted mine with a little coconut flour to get the top crispy when it bakes. Pop in the oven for about 25 minutes. I also had a side of egg whites with it!
