Cinnamon & Sugar Tortilla Bowls filled with Strawberry Greek Yogurt & fresh Fruit!

Breakfast for my little guy!

1 Ole Xtreme low carb tortilla
1tsp Paleo Butter (stay tuned for a new product spotlight, it’s amazing!)
2tbsp stevia
1tsp cinnamon
1 container of fat free strawberry Greek yogurt
Fresh fruit of choice

Preheat oven to 350 degrees. Cut two smaller circles out of the tortilla. Mix together the cinnamon and stevia on a small paper plate. Melt the Paleo Butter (@paleobutter) in the microwave for 25 seconds. Brush both sides of the tortillas with the butter and then dip them into the cinnamon sugar. Place in ramekins that have been sprayed with cooking spray and bake for 20 minutes or until crispy. Fill each cup with yogurt and top with fruit!

60grams precooked Better Body Foods tricolor quinoa

50grams pineapple

50grams strawberry

50grams blueberry

1tsp Better Body Foods agave nectar

Juice from half a lemon

In a small bowl combine the agave nectar & lemon juice. Cut up all of the fruit and mix together with the precooked quinoa and top with the lemon dressing!

Ingredients:

5oz raw chicken breast
1tbsp Better Body Foods agave nectar
1tbsp fresh lime juice
1/2tbsp soy sauce
1tsp Better Body Foods coconut oil
1/tsp Better Body Foods coconut palm sugar
1/8tsp minced garlic
1/8tsp onion powder
1/8tsp lime zest
Fresh ground pepper

Salad:
Bowl full of spring mix/greens of choice
Handful of blueberries
Handful of raspberries
1/4 of a chopped apple
10grams of pecans

Combine the agave, lime juice/zest, soy, oil, sugar, garlic & onion powder in a small bowl. Season the chicken with some fresh ground pepper and place in a zip lock bag. Reserve 1/2tbsp of the marinade in a small dish(for basting) and pour the rest into the zip lock bag. Turn to coat the chicken. Allow to marinate in the refrigerator for at least 2 hours.

Preheat grill to medium-high heat. Grill the chicken breast for 8 or so minutes per side or until cooked through. While the chicken is cooking place the spring mix in a bowl with blueberries

Ingredients:

Any pancake batter

Handful of blueberries

Glaze:

1/4cup powdered sugar

1-1/2tsp milk

1/8tsp vanilla

HEALTHIER VERSION: DIP IN VANILLA FAT FREE GREEK YOGURT instead of glaze (see picture below)

 

Preheat oven to 375 degrees.

Mix up pancake batter of choice per package instructions. Fold in some whole or cut up blueberries (I quartered mine before mixing them in). Pour into muffin baking tin of choice and bake in the oven for just about 12 minutes. While muffins are in the oven, mix together the frosting ingredients in a small bowl. Once muffins have cooled enough to touch, dip into glaze and serve with some more fresh berries!

Ingredients French Toast:

2 slices of low carb bread (I use Mähler’s Flax & Soy that I buy at @freshandeasy)

2 egg whites

1oz unsweetened vanilla almond milk

1/2tsp cinnamon

1/2tsp pure vanilla extract

Topping:

50grams of fresh blueberries

75grams of @dannonyogurt Light & Fit fat free Vanilla greek yogurt

10grams of @plantfusion vanilla protein powder

1/2oz of unsweetened vanilla almond milk

(Optional: packet of stevia)

 

Mix egg whites with 1oz of almond milk, cinnamon, vanilla and soak bread in mixture. Cook in a skillet over medium heat for 2-3 minutes per side. Stir the protein powder into the yogurt with a 1/2oz of almond milk. Cut up French toast and top with Blueberries & Cream.

Blueberry Muffin & vanilla PROYO Parfait! Had to make use of those muffins I baked last night. AND – Oh happy day….while typing up my blueberry muffin recipe this morning I noticed a miscalculation in the macros, and for the better! I had originally thought they were 110 calories but it turns out they are only….wait for it….82 calories with one gram of fat! The parfait has 260cal/26carb/3fat/32pro. I will post both recipes below.

Parfait Ingredients:
-1 gluten free blueberry muffin (recipe below)
-100grams fat free vanilla Greek yogurt
-1 scoop of @plantfusion vanilla protein powder
-2oz unsweetened vanilla almond milk

Directions:
Mix yogurt, milk & protein powder together and layer with cut up muffin.

Muffin Recipe:
Ingredients (makes 6 muffins):

-113grams of all purpose gluten free baking mix (mine is a blend of rice, sorghum & tapioca flour)
-70grams of fresh blueberries (you can add more, this was just the amount I had left in the fridge that needed to be used)
-1 egg white
-1/4cup of unsweetened apple sauce
-Just over 1/3 cup of unsweetened vanilla almond milk
-1 1/4tsp of baking powder
-2tbsp of stevia in the raw (feel free to add more, I prefer less sweet treats)
-Juice from half a lemon

Directions:
Preheat oven to 350 degrees and grease a 6 muffin baking tray.

Combine the flour, baking powder & sugar until mixed well. Add in the egg white, milk, apple sauce and lemon juice and stir until combined. Batter will be pretty thick. Carefully fold in the blueberries and spoon into muffin cups. Bake for about 20 minutes or until a toothpick comes out clean when inserted into the center of muffin
