Strawberry ‘Cheesecake’ Stuffed French Toast – only 265 calories!

2 slices of Mahler’s low carb/high protein bread
100g fresh strawberries – diced
45g fat free plain cream cheese
1 egg white
1oz unsweetened almond milk
1tsp water
1/2tsp pure vanilla extract
1/4-1/2tsp cinnamon
1 stevia packet
Optional: sugar free maple syrup

In small microwave safe bowl mix together 35g of the diced strawberries with the stevia packet & water. Microwave for 25-30 seconds and then mash with a fork. Mix in the cream cheese until well combined – set aside. Whisk the egg, milk, cinnamon & vanilla together in a small bowl. Dip each piece of bread in the egg mixture and cook over medium heat for 2-3 minutes per side. Spread the cream cheese on one piece of the French toast, top with strawberries and the remaining piece of toast. Serve with sugar free maple syrup.

Quick & Simple Grilled Salmon – with a Sweet Glaze!

Ingredients:

5oz raw salmon fillet
1tbsp soy sauce
1tbsp water
1/2tbsp lemon juice
1/2tbsp olive oil
1tbsp Better Body Foods coconut palm sugar (sub brown sugar)
1/4tsp minced garlic
Fresh Ground Pepper

In a small bowl mix together the soy sauce, water, lemon juice, olive oil, sugar & garlic until the sugar is dissolved. Season the salmon with some fresh ground pepper and place in a zip lock bag. Pour the marinade into bag, turn to coat and place in the refrigerator for at least 2 hours.

Preheat grill to medium. While grill is heating up, pour marinade out of the zip lock bag into a small sauce pan. Bring to a boil and then reduce heat and simmer until sauce slightly thickens – about 3-4 minutes. Set aside. Grill salmon on an oiled grate for about 4 minutes each side or until cooked to desired temperature. Pour glaze over salmon & enjoy!

1 Green apple
1 container of fat free vanilla greek yogurt
1tbsp store bought caramel apple dip
Chopped Nut of choice

Cut the top off of the apple and then core it out using a melon baller. Dip the rim into caramel and then into the chopped nuts. Fill with fat free vanilla greek yogurt.

Ingredients:

2 slices of Mahler’s Low Carb/High Protein Flax & Soy bread
2oz smoked salmon
2 pieces turkey bacon
1 roma tomato – sliced
Handful of spinach
Stoneground/Dijon Mustard

Preheat broiler to high. Broil bacon on a foil lined baking sheet until crispy – flipping once or twice. While bacon is cooking toast the bread in a toaster. Spread the mustard on one or both pieces of toast and layer with spinach, smoked salmon, tomato & bacon.

Ingredients:

1 peach
1oz goat cheese
1 packet stevia
Honey/Cinnamon

Preheat grill to medium-high heat. Halve the peach and remove pit. Sprinkle the tops of peach with stevia and grill for 15 minutes or until the peach has softened. Top with the goat cheese, drizzle with honey & sprinkle on some cinnamon!

Ingredients:
1/2 cup old fashioned oats
1 scoop of Plant Fusion chocolate protein powder
3/4cup unsweetened vanilla almond milk
1/4cup fat free vanilla greek yogurt
1tbsp TruVibe Organics chia seeds
1tbsp TruVibe Organics cacao powder
1tsp TruVibe Organics maca powder
1/4tsp vanilla extract
2 packets of stevia
Sugar free chocolate sauce
Banana for garnish

Mix together all ingredients (except chocolate sauce & banana) in a bowl or a jar with a spoon. Cover and refrigerate until ready to eat! Super simple!

Ingredients:

4 egg whites
2 pieces of Turkey Bacon
2 tomato slices
Few Pieces of Spinach
1tsp Paleo Butter (to cook eggs in)
Fresh ground pepper

Preheat broiler to high. Heat Paleo Butter in an oven safe skillet over medium heat with 2 silicone egg rings that have also been lightly greased with the butter. Place the turkey bacon on a piece of foil under the broiler. Crack 2 eggs into each silicone ring in the skillet, top with some fresh ground pepper and cook for about a minute and a half. Next place the skillet under the broiler with the bacon until eggs whites are set. Remove bacon when crispy. Layer egg whites with a few pieces of spinach, 2 slices of tomato and the turkey bacon!

Breakfast for my little guy!

1 Ole Xtreme low carb tortilla
1tsp Paleo Butter (stay tuned for a new product spotlight, it’s amazing!)
2tbsp stevia
1tsp cinnamon
1 container of fat free strawberry Greek yogurt
Fresh fruit of choice

Preheat oven to 350 degrees. Cut two smaller circles out of the tortilla. Mix together the cinnamon and stevia on a small paper plate. Melt the Paleo Butter (@paleobutter) in the microwave for 25 seconds. Brush both sides of the tortillas with the butter and then dip them into the cinnamon sugar. Place in ramekins that have been sprayed with cooking spray and bake for 20 minutes or until crispy. Fill each cup with yogurt and top with fruit!
