Say hello to the newest addition to my cookie cutters collection! How ADORABLE are these? I am in full ramp up mode for Dylan’s school lunches when he starts in 1.5 weeks and I came across these on Amazon. I picked up the ‘Animal Friends’ set just to try them out and I will DEFINITELY be getting all of the others now! The set comes with 4 different faces (panda, pig, frog & cat) that you can either cut out or impress into your bread, cheese, meat, etc! The design possibilities are endless and the whole set was less than $10!

Ingredients

60grams precooked Better Body Foods quinoa
1 Banana
1.5tsp of TruVibe Organics cacao powder
1tbsp peanut butter
1/4tsp Better Body Foods organic pure vanilla extract
1/2packet stevia

Mash the banana & peanut butter together in a bowl with a fork. Next add in the cacao powder, vanilla & stevia and stir until well combined. Finally mix the cooked quinoa into the banana mixture & enjoy!

60grams precooked Better Body Foods tricolor quinoa

50grams pineapple

50grams strawberry

50grams blueberry

1tsp Better Body Foods agave nectar

Juice from half a lemon

In a small bowl combine the agave nectar & lemon juice. Cut up all of the fruit and mix together with the precooked quinoa and top with the lemon dressing!

Banana & Peanut Butter toast towers for my little guy this morning! Simple ingredients just made a little more fun & exciting by stacking them! Fun kids food doesn’t have to be complex!

4 pieces of bread

1 banana

Peanut butter

(optional: chocolate sauce)

I used a round cookie cutter to cut the circles out and then toasted them in the toaster. Add some peanut butter to the bread and thick banana slices and VOILA, fun little towers.

P.S. – save the crust/cut off bread in zip lock bags in the freezer for using in other recipes as bread crumbs, etc. We also use it to go feed the ducks at the park!

Peanut Butter, Banana & Cocoa Krispies Roll-ups!

Peanut Butter, Banana & Cocoa Krispies Roll-ups!

Ingredients:

1 whole wheat tortilla

2tbsp peanut butter

1 banana sliced very thin

1/4cup of cocoa krispies

<optional: 3 small strawberries>

 

Smear peanut butter on top of the tortilla. Next top the peanut butter with thin slices of banana and then the cocoa krispies. Roll tortilla up and cut into slices. Optional: Cut 3 small strawberries in half, lengthwise. Trim into a heart shape with a small paring knife and then attach to the top of the rolls with a broken in half toothpick!
