Zucchini noodles with Harissa, yellow pepper, tomatoes & an egg!
It felt like an ‘egg for lunch’ kind of day today! Zucchini noodles with Harissa, yellow pepper & tomatoes!
6oz zucchini noodles (made with my Paderno spiralizer, love it!)
1 large egg
1tbsp Mina spicy harissa
1.5oz chopped yellow pepper
6 cherry tomatoes – halved
1tsp Paleo Butter
1tsp diced yellow onion
1/4tsp minced garlic
Flat leaf parsley – chopped
Place 1tsp of Paleo Butter in a small skillet over medium-low/medium heat. Once the butter is hot, add in garlic and yellow onion. Cook for about 30-60 seconds and then add in the harissa, cherry tomatoes & yellow pepper. Continue to cook for another minute or so and then add the zucchini noodles into the pan, lightly season with salt & pepper. Stir the noodles until fully coated in the sauce. Make a ‘nest’ in the noodles and then crack the egg into it. Cover and cook until the egg white is fully set, roughly 5-6 minutes. Top with fresh ground pepper & chopped parsley.

4 Athens mini phyllo dough shells (from the freezer section that come prebaked)
21grams of Mascarpone cheese
50grams of skim ricotta cheese (could use fat free)
2 packets of stevia in the raw
1/8-1/4tsp depending on taste of Better Body Foods Organic Pure Vanilla extract (it’s the best! It can be found online here: http://www.betterbodyfoods.com/
Tiny pinch of cinnamon
7grams of chocolate chips
Mix all ingredients together in a small bowl and spoon into phyllo dough shells. Enjoy! I know me & my little guy did 😉
Raspberries & Cream French Toast waffles – only 300 calories!
Tired of the same old boring French toast? Well look no further! French toast cooked in a waffle maker instead of a skillet and then cut into mini sandwiches!
Full Macros for the ingredients that I used: 300cal/28carb(I used low carb bread)/5fat/35pro
2 slices of Mahler’s low carb Flax & Soy Bread (I purchase mine at Fresh & Easy but I’m sure it’s available online)
100grams fresh raspberries
85grams Dannon Light & Fit fat free vanilla greek yogurt
2 egg whites
1oz unsweetened vanilla almond milk
1/2tsp Better Body Foods organic Pure Vanilla Extract
1 packet of stevia in the raw
Sugar Free Chocolate sauce

Preheat waffle iron.
Mix together the egg, milk, cinnamon, vanilla & stevia in a small bowl until well combined. Place bread in shallow dish where each slice can lay flat. Pour egg mixture into dish and flip bread multiple times until all of the liquid is soaked up. Cook in preheated waffle iron. Once out of the waffle maker, cut each slice of bread into quarters and sandwich with greek yogurt/raspberries. Top with a little sugar free chocolate sauce!

Blue Diamond Almond Nut Thins
1oz Brie Cheese
I quickly warmed the raspberries with a little honey in the microwave for about 20 seconds and then topped the cheese & crackers. Serve with some fresh thyme & almonds slices sprinkled on top. Yum!
Hawaiian BBQ Chicken wrap with fresh grilled Pineapple, Red Onion & Cheddar Cheese. 325cal/34carb/5fat/35pro
1 Ole Xtreme low carb/high fiber tortilla
4oz of raw chicken breast
70grams of fresh pineapple
2 slices of purple onion
32grams of BBQ sauce
14grams of fat free shredded cheddar cheese
handful of spinach
Fresh ground pepper
Directions: Preheat Panini grill or any other small grilling device. Bring water to a boil in a small sauce pan & boil chicken for 12 minutes. While chicken is cooking cut up the pineapple and grill with the red onion for a few minutes. Once chicken is cooked, shred with 2 forks, season with some fresh ground pepper and mix with the BBQ sauce. Layer the wrap with spinach, shredded chicken, cheese, pineapple, red onion and a little more spinach. Fold over both sides of wrap and grill in a Panini press for a few minutes until cheese is melted.
