Ingredients:

2tbsp (14grams) TruVibe Organics Goji Berries
1 frozen banana
1 cup frozen strawberries
1 cup unsweetened vanilla almond milk
1 scoop Plant Fusion vanilla protein powder
1/2 cup fat free vanilla greek yogurt
1/4tsp cinnamon
1 packet of stevia
Optional: 1/4tsp xanthan gum (makes it so creamy!)

Blend all ingredients in a blender & ENJOY!

Perfect dessert for under 100 calories – 8 grams of protein!

I decided to take my Enlightened (@eatenlightened) Fudge Bar to another level tonight – and it still has less the 100 calories!

1 Enlightened fudge bar – only 70 calories with 8grams of protein!

2grams nut topping

Drizzle of sugar free chocolate & caramel sauce

Gluten free chocolate protein bites! 55 calories each including white chocolate drizzle – so good!

Makes 7 large bites

127grams rinsed canned low sodium black beans

26grams honey

11grams coconut oil

15grams of @plantfusion chocolate protein powder

5grams unsweetened coco powder

1/8tsp pure vanilla extract

7grams of melted white chocolate

Combine beans, honey, coconut oil & vanilla in a food processor until smooth. Transfer to small bowl and stir in protein powder/cocoa powder until well combined. Place in the freezer for about 15 minutes to firm up. Remove from freezer and roll into 7 heaping tablespoon size balls and place on parchment paper. Melt the white chocolate for about 30-45 seconds in a zip loc bag in the microwave, or until melted. Cut of the corner of bag and drizzle over chocolate balls. Store in an air tight container in the refrigerator.

27 grams of oat flour

1 scoop of Vanilla Plant Fusion protein powder

4oz unsweetened vanilla Almond milk

1 egg white

1/2tsp baking powder

1/2tsp cinnamon

1/2tsp pure vanilla extract

1packet of stevia

75grams strawberries 3

0grams blueberries

75grams of vanilla greek yogurt

 

(Note: liquid amount may differ with different protein powders) Preheat waffle iron. Mix flour, protein powder, stevia, baking powder & spices until combined. In another bowl lightly beat egg, vanilla & milk. Add the wet ingredients into the bowl with dry ingredients and mix until combined. Cook a 1/3 cup of batter in the center of the waffle iron (makes a total of 3). Top with vanilla greek yogurt & cut up strawberries/blueberries.
