Best breakfast EVER – just look at that amazing ooey, gooey chocolate!

2 slices of Mahler’s low carb/high protein Flax & Soy bread (my favorite)
12grams Better Body Foods PB Fit + 1.5tbsp water
1/2 banana – sliced
14grams Amber Lyn sugar free dark chocolate bites

Mix the powdered peanut butter with the 1.5tbsp of water and spread onto a piece of bread. Layer with the sliced banana and then the dark chocolate chunks. Top with the remaining slice of bread and press in a Panini maker (or between to heated skillets) until the chocolate is melted and bubbling!

Ingredients:

2 frozen bananas
3tbsp unsweetened vanilla almond milk
Amber Lyn sugar free dark chocolate chunks
Chopped nuts
Silicone ice cube tray

Place the frozen bananas & milk in a blender/food processor and blend until creamy & smooth. Spoon/pour into a silicone ice cubes tray mold (I used a pastry bag to make it less messy!) and place back in the freezer for 2 hours. Once frozen, melt chocolate in a microwave safe dish for 1-1:30 minutes, stirring every 20 or so seconds until melted. Remove ‘nice cream’ from the molds and place on wax paper. Insert a toothpick into the top, dip in chocolate with the help of a spoon and sprinkle with nuts. Work quickly to do the remaining bites and the place them all back in the freezer for 30 minutes to set! I’m not sure exactly how many this would have made because I ate a bunch of the ‘nice cream’ before I even poured it into the molds!

Ingredients:

1 Ole Xtreme low carb tortilla
1.5oz reduced sodium deli turkey
1oz brie cheese
20grams dried cranberries

Heat a skillet over medium heat. Once hot, spray with cooking spray and then lay the tortilla flat in it. Cover the tortilla with the turkey and then spread the cheese over the turkey. Sprinkle with cranberries. Cook until the cheese begins to bubble and the tortilla starts to crisp. Fold over, cut & enjoy!

Ingredients:

1 Thomas’ light whole wheat English muffin
1 large egg
2 roma tomato slices
1 slice of fresh mozzarella cheese
1tsp olive oil
1tsp balsamic vinegar
2 fresh basil leaves – chopped
1/2tsp Paleo Butter (@paleobutter)
Fresh ground pepper
Optional: balsamic glaze

Place sliced tomatoes in a small bowl with olive oil/balsamic vinegar, basil and top with some fresh ground pepper – set aside and allow to marinate while you prepare everything else. Heat the Paleo Butter in a small skillet over medium-low heat. Once hot, carefully crack the egg into the butter and place the muffin in the toaster. Allow the egg to cook for about 2 minutes and then flip and top with the cheese slice. Cover with a lid and cook for an additional minute. Remove from the heat but leave the pan covered to allow the cheese to melt. Layer the English muffin with the egg/cheese, marinated tomatoes and top with a dash of pepper and balsamic glaze.

Ingredients:

66grams fat free cream cheese
36grams fat free cool whip
100grams of fresh strawberries
1 stevia packet
Amber Lyn sugar free dark chocolate chunks

Mix together the cream cheese & cool whip in a small bowl until well combined. Puree the strawberries in a food processor and stir into the cream cheese mixture. Next add in the stevia. Spoon strawberry mixture into a silicone ice cubes mold and freeze for at least 4 hours (mine made enough for 15). Once frozen, melt chocolate in small microwave safe bowl. Dip each strawberry bite into the chocolate with the help of a fork & toothpick and place on wax paper. Return to the freezer once covered in chocolate until you are ready to enjoy them!

It felt like an ‘egg for lunch’ kind of day today! Zucchini noodles with Harissa, yellow pepper & tomatoes!

6oz zucchini noodles (made with my Paderno spiralizer, love it!)
1 large egg
1tbsp Mina spicy harissa
1.5oz chopped yellow pepper
6 cherry tomatoes – halved
1tsp Paleo Butter
1tsp diced yellow onion
1/4tsp minced garlic
Salt/Pepper
Flat leaf parsley – chopped

Place 1tsp of Paleo Butter in a small skillet over medium-low/medium heat. Once the butter is hot, add in garlic and yellow onion. Cook for about 30-60 seconds and then add in the harissa, cherry tomatoes & yellow pepper. Continue to cook for another minute or so and then add the zucchini noodles into the pan, lightly season with salt & pepper. Stir the noodles until fully coated in the sauce. Make a ‘nest’ in the noodles and then crack the egg into it. Cover and cook until the egg white is fully set, roughly 5-6 minutes. Top with fresh ground pepper & chopped parsley.

Ingredients:

1 peach
1oz goat cheese
1 packet stevia
Honey/Cinnamon

Preheat grill to medium-high heat. Halve the peach and remove pit. Sprinkle the tops of peach with stevia and grill for 15 minutes or until the peach has softened. Top with the goat cheese, drizzle with honey & sprinkle on some cinnamon!

1 scoop Plant Fusion Vanilla protein powder
1cup orange juice
1/4 a whole cantaloupe (I cut mine up and froze it the night before)
2 kiwis
1/2 frozen banana
1tsp Pineapple Coconut Dasani Water flavor enhancer drops (could sub lemon/lime juice)
1 stevia packet

Blend everything together in a blender & enjoy!

I use a Ninja Blender for all of my smoothies & I am extremely happy with it!

My son asks for this every time he sees it in the store, well yesterday was his lucky day! Mom finally caved and got him one! The ‘Social Media Kit’ is what really pushed the sale for me. All of you should know by now that I love cookie cutters of any shape or size! When I see them, I have to have them.

I give the Zoku quick pop maker 2 thumbs up! It is so easy to use. I placed it in the freezer last night and it was ready to go for his afternoon snack today. You literally just pour in any juice and watch it freeze! Dylan was having homemade popsicles in less than 10 minutes – proud mommy moment!

I used the little cookie cutters to cut out apple pieces and then stuck them inside the quick pop make prior to adding the juice with the provided spatula. Super simple and he was even able to help me do it! Now my mind is racing with all of the recipes I plan on making with it in the future. I want to try yogurt pops next!

Ingredients:
5 raw shrimp
2 sliced strawberries
14grams pecans
1/2tbsp olive oil
1tsp balsamic vinegar
1/2tsp honey
1/8-1/4tsp minced garlic
Salt
Balsamic glaze or balsamic reduction
Bowl of spring mix

Peel and devein the shrimp and rinse in cool water. In a small bowl mix together the olive oil, balsamic vinegar, honey & minced garlic – set aside. Slice up the strawberries and layer in a bowl with the spring mix and pecans (toasting them is optional). Heat a small skillet over medium heat. Lightly salt the shrimp and once the pan is hot add in the sauce mixture and then the shrimp. Cook each side until it turns pink – be careful because they cook QUICKLY! Add shrimp to premade salad and drizzle with balsamic glaze.
