Mini Frozen Cheesecake Cups with only 50 calories each! Perfect treat to have in the freezer at all times – quick & simple to make!

Yields 6 Cups:
6 Athens mini phyllo shells(from the freezer section that come prebaked)
75grams fat free cream cheese
50grams fat free Cool Whip
1/4tsp Better Body Foods pure vanilla extract
2 packets stevia
1 Amber Lyn Chocolates sugar free dark chocolate bites
6 fresh/frozen raspberries

Melt the dark chocolate square for about 20 seconds in the microwave in a small dish. Dip the tops of the phyllo shells in the chocolate and place in the freezer to set. Mix together the cream cheese, cool whip, stevia & vanilla in a small bowl until well combined. Spoon into cups and place back in the freezer for at least 2 hours. Enjoy!

French Toast:
3 pieces of Sara Lee 45 calorie bread
1 egg white
1/2oz unsweetened almond milk
1/4tsp Better Body Foods Organic pure vanilla extract
1/4tsp cinnamon
Sugar free chocolate sauce/powdered sugar for topping

Filling:
21grams mascarpone cheese
50grams of skim Ricotta cheese (could reduce macros more with fat free)
6grams of TruVibe Organics cacao nibs
2packets of stevia
1/4tsp Better Body Foods Organic pure vanilla extract
Pinch of cinnamon

Mix together all of the filling ingredients in a small bowl and set aside. In a separate small bowl mix the egg white, milk, vanilla & cinnamon together and lightly beat with a fork. Using a rolling pin, flatten each piece of bread and cut out a circle. Dip each circle into the egg mixture and cook over medium heat for 2 or so minutes per side. Stuff each piece of toast with the filling (I secured mine with a tooth pick) and top with a little sugar free chocolate sauce & powdered sugar!

My go-to when I have blueberries about to go bad. I have a HUGE tendency to over buy when they are on sale!

1cup of unsweetened vanilla almond milk or coconut milk

1 scoop of PlantFusion Vanilla Protein Powder (my stomach has issues with whey, so you’ll notice this is the brand I typically use)

1 frozen banana

1cup of fresh blueberries (could use frozen)

1/2cup of fat free Vanilla Greek Yogurt

1tbsp Chia Seeds

1/2tsp vanilla extract

1/4-1/2tsp cinnamon (optional but I love it in everything, and lots of it!)

1 packet of stevia

Optional: 1/4tsp xanthan gum (makes it really thick & creamy)

Throw everything together in a blender & blend. Pour in a cup & enjoy. Nothing fancy, just quick & simple like most of my recipes! The xanthan gum makes it so nice & thick that sometimes I pour it in a bowl and eat it with a spoon! YUM

I use a Ninja Blender for all of my smoothies & I am extremely happy with it!

Lightly beat eggs, vanilla, stevia & cinnamon with a fork in a small bowl. Cook over medium heat like a regular omelette. Once cooked, smear with a little Nutella, add some cut up strawberries and fold over!

I was able to significantly reduce the calories/fat in these brownies by using Better Body Foods PB Fit powdered peanut butter instead of regular peanut butter! Another way I kept the calories down was by using TruVibe Organics pure CACAO powder instead of regular cocoa powder. The depth of the dark chocolate flavor is so much stronger than regular cocoa powder that I was able to eliminate using chocolate chips! These come out to 81 calories per brownie/1300 for entire 8×8 pan.

Ingredients:

105grams of Better Body Foods PB Fit (mixed with 1/2cup + 1 tbsp water)

5tbsp of ground oats (measure after grinding oats – use gluten free oats if necessary)

1/4cup of TruVibe Organics pure cocao powder (http://truvibeorganics.com/)

1 scoop Plant Fusion chocolate protein powder

1/2tsp baking powder

1/4tsp baking soda

3tbsp Better Body Foods agave nectar

2tbsp Better Body Foods coconut palm sugar

2tbsp stevia in the raw

1tsp Better Body Foods pure vanilla extract

3/4cup unsweetened applesauce

1 large egg

 

Preheat oven to 350 degrees and line an 8×8 baking dish with parchment paper. Don’t attempt to make these without the parchment paper. They WILL STICK even with cooking spray!

In a medium size bowl add the oat flour, cocao, protein powder, baking powder, baking soda and then set aside.

In a small bowl mix the powdered peanut butter with the water(1/2cup + 1tbsp) until well mixed. Measure out 1/2 cup of the peanut butter (save the rest to swirl on the top) and place it in a large bowl with the coconut palm sugar, stevia, vanilla, agave and applesauce. Beat wet mixture using a hand mixer. After the mixture is smooth add the egg and beat lightly until combined. Add the wet mixture into the oat mixture and stir just until combined making sure not to over mix. Pour into 8×8 baking dish and swirl the remaining peanut butter into the top. Bake for about 22-24 minutes making sure not to over cook. I took mine out at 22 minutes and they were perfectly cakey/fudgy!

Ingredients:

-1 Scoop (30grams) of chocolate Plant Fusion protein powder
-3 egg whites
-7ozs of  unsweetened Vanilla Almond Milk – DIVIDED
-50grams of Dannon Light & Fit Vanilla Greek Yogurt
-11grams of unprepared Jello Sugar Free/Fat Free Banana Cream Pudding mix
-3oz of banana
-1 packet of stevia

Directions:
*Note – This is what worked for the protein powder that I use, others may require more/less liquid*

First I mixed the pudding mix with 3 ounces of almond milk and placed it in the refrigerator to set.

In my ninja blender I mixed the protein powder, stevia, 4 ounces of almond milk & egg whites. I preheated my skillet to low to medium low heat – I found that working with a low temperature was best as it allowed me to swirl & coat the pan with batter before it started cooking. In fact, I would hold the pan off the heat for 30 or so seconds before pouring batter in. Once I felt the pan was cool enough I would pour about 1/4 of cup into a small skillet and swirl around until the pan was coated with a thin layer. I would cook it until the edges started rolling in. I ended up flipping all of mine with my hands because I found it to be easier than trying to get a spatula under it. Once all of my crepes were made I took the pudding out, mixed the yogurt into it to really thicken it and then filled them. I quickly sliced up the banana and sautéed it for a minute or two with cooking spray and then poured on top!

Ingredients (made 10 – 1tbsp of dough cookies):

<note: these are not meant to be overly sweet cookies, these are intended more as a breakfast cookie to accompany yogurt, etc. Adjust sweetener to taste)

1/2 cup of whole wheat flour

1/4 cup of quick cooking oats (not instant)

1/4tsp baking soda

1/4tsp cinnamon

2 egg whites

1tbsp of Better Body Foods Agave Nectar (yum!)

2tbsp Better Body Foods Coconut Oil

3tsp of stevia in the raw

1tbsp fat free vanilla greek yogurt (I’m sure you could sub applesauce)

15grams dark chocolate chips

Place tablespoon size amounts of dough on a baking sheet lined with parchment paper and bake 7-9 minutes depending on oven. Be careful not to over bake or they will be come dry.
